Fontina cheese is the pièce de resistance of Val d’Aosta agricultural produce and an extremely important element in traditional local cuisine. It is a soft, full-fat cheese, made with full-cream cow’s milk from a single milking session.

In 1996, the European Union awarded it the Denominazione di Origine Protetta (DOP) status.

During the festival, you can taste it as it is, or cooked in various styles.
